We’ve been inspired by @relaischateaux and @slowfood_international to push the boundaries of fine dining and shine a spotlight on the nutritional power of vegetables, legumes, nuts, whole grains, seaweed, fermented foods and other plants.
They can give us protein and growing them sustainably benefits our ecosystems.
